A summer time classic and holiday essential. Some say it's the ultimate rum cocktail, some say it's the ultimate refresher. Let's just say it's a Mojito.

Ingredients

Instructions

  1. In a tall glass, pour in the rum, sugar syrup and lime juice.
  2. Slap the mint leaves to release the flavour and drop them into the glass. The amount of mint leaves you use will rely on the freshness. For bright vibrant and fresh mint leaves, use between 3 and 5. For older or smaller mint leaves with little flavour use more.
  3. Fill the glass almost to the top with crushed ice and using a bar spoon, churn the cocktail to mix and dilute.
  4. Top the cocktail up with more crushed ice and soda water. Give a light stir to mix in the soda water and mix around the mint leaves so they don’t just sit at the bottom of the glass.
  5. Garnish with a lime wheel and sprig of mint. Slap the mint sprig before garnishing to release the flavour.

Notes

top tips for variations

For variations, there's loads you can do with this one. The simplest variation would be to swap out the white rum for another spirit. Spiced and dark rums are easiest switches, but also tequila, gin, and aquavit.


If you don't fancy swapping out the spirit, how about swapping the sugar syrup for flavoured syrup. You can try raspberry for a raspberry mojito, orgeat, blackberry, whatever you like!


You can also get that extra flavour in by muddling fresh fruits like strawberries into the glass before building your cocktail.


Finally its all about the soda top, try swapping it out for champagne and you have a royal mojito.
