The other day I had a right craving for pea and mint soup. So on my weekly trip to the shops I had a keen eye on the look out to satisfy my pea and mint soup craving. Alas, It wasn't meant to be!

Step one
Gather, chop, and prepare your ingredients. This should only take 5 minutes.
Gently heat the oil and butter in a large saucepan over medium heat. Once the butter has melted, add the chopped onion. Cook for 10 minutes or until the onion is soft but not brown, remembering to stir continuously so the onion does not burn.
Step Two
Add the garlic and cook for a further 3 minutes, continuously stirring as to not burn the onion or garlic.
Step Three
Add the mint, and majority of your peas and veg stock. leaving a quarter of both peas and stock to use later. Cover the saucepan with a lid and cook on a medium heat for 10 minutes.
Tip: If you don’t have a saucepan lid, you can use a plate. Just remember to use a towel when removing the plate as it will be hot!
Step four
Once cooked, blend the soup into a thick puree. You could use a blender, food processor or as I did, this hand blender.
Step Five
Add the remaining peas and stock to the soup. Season with salt and pepper to taste and cook for a further 5 minutes ensuring the newly added peas are cooked.
Step Six
Plate up your soup and it’s ready for its final touches. Garnishing your pea and mint soup. Garnish this soup with a swirl of double cream and candied mint leaf.

Notes
Finishing touches: Garnish your soup with an optional swirl of cream. Not only does it look picture perfect, but it adds an indulgent creaminess to the soup.
You can also serve your soup with bread, don't feel guilty, even with bread it's super low calorie.
