7 ways Cauliflower Cheese Pasta

Enough of my babbling on. And onto the fun part, the recipe for this cauliflower cheese pasta. Just to recap on what we have already mentioned about this (For those of you who just scrolled past to find the recipe)
This cauliflower cheese pasta recipe for Jamie Oliver’s 7 ways cookbook is: Easy (It only has 7 ingredients) Quick (takes 30 minutes) Healthy (It’s pretty low calorie and has a high protein intake of 18.9g) Vegetarian (Big shout out to my fellow veggies out there) And maybe most importantly, delicious.
Serves 4
Step by Step instructions for Jamie Oliver’s Cauliflower cheese pasta with photos.
Step one
Tear the sourdough bread into a food processor. Peel and add the garlic, then tear in any nice leaves from your cauliflower. Add ½ a tablespoon of olive oil, Blitz into fairly fine crumbs.
Step two
Tip the crumbs into a large non-stick frying pan on a medium heat. Cook for 15 minutes, or until golden and crisp, stirring occasionally.
Meanwhile, peel the onion, then roughly chop with the cauliflower, stalk and all.
Step Three
Tip the crispy crumbs into a bowl, for later. Returning the pan to the heat. Pour in the milk and add the chopped onion and cauliflower, bring just to the boil, then reduce the heat to low, cover and simmer.
Step Four
Whilst your cauliflower and onion are frying, cook the pasta in a pan of boiling salted water according to the packet instructions. Just before the pasta is ready, carefully pour the cauliflower mixture into the food processor. Grate the cheese over the mix, blitz until super smooth, then season to perfection.
Step five
Drain the pasta, reserving a mugful of starchy cooking water, Toss the pasta through the sauce, loosening with a splash of reserved cooking water, if needed, then serve with the crispy crumbs.

- Alongside, cook the pasta in a saucepan of boiling salted water according to the packet instructions. Just before the pasta is ready, carefully pour the cauliflower mixture into the food processor, grate the cheese, blitz until super smooth, then season to perfection.
- Drain the pasta, reserving a mugful of starchy cooking water, Toss the pasta through the sauce, loosening with a splash of reserved cooking water, if needed, then serve with the crispy crumbs.
Notes
When it comes to your sourdough breadcrumbs, don't worry if it's a little past its best, in fact, older bread works best so it's a great way to use old bread that you would otherwise throw away. The breadcrumbs also work great for topping other pasta dishes, fish, and salads. So before you think about throwing away that 'seen better days' bread, try blitzing it to top your next meal.
