Yep, I’m back again with yet another recipe courtesy of the nation's favourite P.E teacher and fitness fanatic Joe Wicks, aka the body coach. I just can't stop cooking from his veggie lean in 15 cook book. And when I taste something delicious, I just have to share it. And delicious is exactly what this is.
In the past, I’ve shared a Joe wicks breakfast recipe, A Joe Wicks lunch recipe and a Joe Wicks dinner recipe. So it’s only right that we now do a Joe Wicks dessert recipe. And I couldn’t think of anything more tasty to share then this super quick maple syrup caramelized banana split recipe, with ice cream (or frozen yogurt) toasted pecans and drizzles of salty dark chocolate. Absolutely de-lic-ious.

Make it as healthy as you like
This dessert recipe is one for the healthy folk out there but at the end of the day, its still a dessert. Having oodles of chocolate and maple syrup is what makes this so indulgent. Which also happens to be the part that makes it not so healthy.
But when it comes to topping our banana split we can do this with either ice cream or frozen yogurt. Frozen yogurt will be the healthier choice. Get your protein in and all that. But ice cream just goes so damn well with this recipe.
If you’re opting for the ice cream topping, it’s completely up to you which ice cream you go for. By all means use a low calorie ice cream to keep the dessert low cal. Or whichever your favourite is. Chocolate ice cream goes amazingly well with the caramelized banana and pecans, so I recommend a good dollop of chocolate ice cream.
Caramelized Banana Split Recipe
As you will see below, this recipe couldn’t be any simpler. It takes a grand total of about 5 minutes from start to finish. Watching something on TV? You could easily whip this up in the advert break and be back in time.
Ingredients
10 Pecan halves
1 Small banana
1 tbsp Butter
1 tbsp Maple syrup
30g Dark chocolate broken into pieces
Sea salt
1 Spoonful of frozen yogurt or your choice of ice cream
Method
Toast the pecans in a dry frying pan over a medium heat, then allow to cool and roughly chop.
Cut your banana lengthwise.
Put the frying pan back on the heat. Melt the butter, then stir in the maple syrup.
Lay the banana cut-side down in the butter and syrup mixture. Cook for 3-4 minutes, regularly spooning the butter syrup mixture over the banana to help it caramelize.
Ping the chocolate in the microwave for 30 seconds to melt it, Then stir in a pinch of sea salt.
Put your caramelized banana slices, cut-side up, into a bowl. Spoon the frozen yogurt or ice cream into the centre, then drizzle over the melted chocolate and sprinkle chopped pecans.
Step by step instructions with photos
1) Toast the pecans in a dry frying pan over a medium heat for 2 - 3 minutes, then allow to cool and roughly chop them.
2) Peel your banana and cut your banana lengthwise. Put the frying pan back on the heat. Melt the butter, then stir in the maple syrup.
3) Lay the banana cut-side down in the butter and syrup mixture. Cook for 3-4 minutes, regularly spooning the butter syrup mixture over the banana to help it caramelize.
Do this until the syrup is sticky and the banana are caramelized
4) Put the chocolate in a microwaveable bowl and microwave for 30 seconds to melt it, Then stir in a pinch of sea salt.
5) Put your caramelized banana slices, cut-side up, into a bowl. Spoon the frozen yogurt or ice cream into the centre, then drizzle over the melted chocolate and sprinkle chopped pecans.
